“It’s so worth it…your body and health are the most precious gifts you have”

When Kathleen Cunningham was diagnosed with type 2 diabetes six years ago she was told she needed to eat a healthy diet. Wanting support with her carb intake, Kathleen attended a low carb meet up in 2017 to find out more about the lifestyle.

“Before the first meet up I felt it would be hard giving up carbs, I am a vegan and find it hard to limit the amount of carbs I eat. I am also lactose intolerant. However, after the meet up I managed to find alternatives. I bought a spiralizer and now make courgetti instead of spaghetti”

Kathleen managed to lose 9.5kg (1st 7 lbs) after the meet up and reduce her HbA1c from 86 mmol/mol (10%) to 31 mmol/mol (5%), meaning it was now in normal range.

“I found wonderful recipes and great support network. I was most surprised when I visited the doctors and they said my drop in blood sugar was amazing and to keep at it.
