Strawberry, Chocolate Chip & Mascarpone Mug Cake

Cake has always been a favourite sweet treat of mine – so I was happy to hear that going low carb didn’t mean I had to miss out. Try out this indulgent Strawberry, Chocolate Chip & Mascarpone Mug Cake. Quick and easy to make, it’ll be ready in less than 5 minutes!

Strawberry, Chocolate Chip & Mascarpone Mug Cake

Cook time 1 ½ minutes

Serves 1


30g Ground Almonds

1 Egg, beaten

¼ tsp. Baking Powder

1 ½ tsp. Stevia

1 tsp. Butter, softened

¼ tsp. Vanilla Extract

25g Strawberries

10g Dark Chocolate 85%

For topping:

1 tbsp. Mascarpone Cheese


Preparation Method

  1. Add the ground almonds, egg, baking powder, stevia and butter to a mug or similar size microwavable container and then mix well until combined.
  2. Dice the strawberries, chop the chocolate then stir them through.
  3. Microwave on high for 1 ½ minutes. Serve warm topped with the mascarpone.
