Try these Spooktastic recipes for Halloween

Guaranteed to lift spirits this Halloween! These recipes are simple yet scarily good.

Haunted Halloween Pizza

Prep time 20 minutes

Cook time 15 minutes

Serves 4

 

Ingredients

For the base:

140g Grated Mozzarella Cheese

50g Soft Cheese

1 Large Egg

150g Ground Almonds

For the topping:

100g Passata

1 Handful Black Olives

125g Mozzarella Cheese

4 Salami Slices

1 Green Olive

Small Handful Fresh Basil

 

Method

  1. Preheat the oven to 220°C/200° fan (430°F/390°F fan) and line a baking tray with greaseproof paper.
  2. Start by making the base. Place 140g of grated mozzarella and the soft cheese in a microwavable bowl and microwave for 1-1½ minutes until melted then stir.
  3. Break the egg into the bowl and mix.
  4. Add the ground almonds to the bowl and mix until a dough begins to form. You can use your hands to knead the dough.
  5. Place the dough on a baking tray and use your hands to spread the dough out evenly.
  6. Use a fork to make holes in the dough then bake for 8-10 minutes until golden brown.
  7. Meanwhile, start preparing the topping. To make the spiders, slice the olives thinly and then slice the circles in half. This is for the spiders legs. For the body, slice olives in half lengthways. Finely dice another olive to make eyes/mouths for the mozzarella ghosts. Set the olive slices aside.
  8. Tear the mozzarella and use ¼ of it to place on top of each of the salami pieces then slice the green olive into 4 widthways and position on top of the mozzarella then set aside. This depends on the size of your salami slices, if they are big you will have to cut out smaller circles then follow the above step.
  9. Take the dough out of the oven then spread the passata evenly over the base.
  10. Arrange the remaining mozzarella into ghost-like shapes on the pizza base, leaving room for it to spread.
  11. Place the spiders, salami eyeballs on the pizza then scatter a few basil leaves around.
  12. Return the pizza back to the oven for 5 minutes or so until the cheese starts to melt.
  13. Serve and enjoy!

Strawberry Cheesecake Ghosts (v)

Prep time 15 minutes

Chill time 30 minutes

Serves 5

 

Ingredients

100ml Double Cream

50g Soft Cheese

1 tsp. Vanilla Extract

250g Strawberries

10g 85% Dark Chocolate

 

Method

  1. In a large bowl, whisk together the double cream, soft cheese and vanilla extract until it forms soft peaks.
  2. Leaving the strawberries whole, dip them in the cream mixture until fully covered and then place on a serving platter/tray.
  3. Repeat until all the strawberries are covered and leave to set in the fridge for half an hour.
  4. After half an hour, melt the chocolate in the microwave or on the hob then use a cocktail stick or a similar tool to dip into the melted chocolate and dab onto the cream to make 3 circles for the eyes and mouth. Pop them back in the fridge until ready to serve.
