Easy Peasy Ice Lollies

Summer days call for some summer classics! Who doesn’t love a cooling ice lolly on a hot day?

With a lot of the shop bought ice lollies containing high levels of sugar, they aren’t ideal to be snacking on. But, don’t worry, we have fixed this problem by making our own low carb ice lollies. Both these recipes are made up of 3 or less ingredients, they are really easy and even more delicious!

 

Raspberry Ice Lollies (v)

Prep time 10 minutes
Freeze time 2 hours
Makes 2 

Ingredients
50g Frozen Raspberries
200ml Tinned Coconut Milk
½ tsp Stevia

Preparation method

  1. Using a blender, combine the raspberries and coconut milk and blitz the mix until a smooth consistency is achieved.
  2. Add the stevia and mix well.
  3. Pour into 2 ice lolly moulds and leave to set in the freezer for at least 2 hours.

Blueberry Yoghurt Ice Lollies (v)

Prep time 10 minutes
Freeze time 2 hours
Makes 2 

Ingredients
100g Frozen Blueberries
250g Greek Yoghurt

Preparation method

  1. Combine the blueberries and yoghurt in a blender and blitz until a smooth consistency is achieved.
  2. Add the mix to two ice lolly moulds and leave to set in the freezer for at least 2 hours.
