3 low carb radish recipes

As well as being super low carb (2g/100g), radishes are rich in folic acid and potassium and a great source of vitamins C and B6. Their delicious peppery flavour and crisp, crunchy texture makes them a versatile ingredient that can be used in many dishes. We’ve included 3 of our favourite low carb radish dishes below.

Pickled Radishes (v)

Prep time 10 minutes
Cook time 10 minutes
Serves 8

Ingredients
600g Radishes
300ml Apple Cider Vinegar
100ml Water
1 tbsp. Stevia
2 tsp. Salt
1 tbsp. Mustard Seeds
2 Bay Leaves

 

Preparation Method

  1. Start by sterilising a jar. Preheat your oven to 180˚C/160˚C fan (320˚F/350˚F fan).
  2. Wash your jar and the lid in hot soapy water and stand it upside down on a baking tray whilst still wet.
    After 15 minutes in the oven, your jar will be sterilised.
  3. Remove the end of the radishes and very thinly slice them, then transfer into a sterilised airtight jar.
  4. Combine the remaining ingredients in a pan and bring to the boil.
  5. Pour the mixture into the jar of sliced radishes, then seal and leave to cool. When cool, store in the fridge for up to 3 months.

Creamy Radish Soup (v)

Prep time 10 minutes
Cook time 25 minutes
Serves 2

Ingredients
450g Radishes
1 Medium Onion
150g Soft Cheese
100ml Single Cream
1 tbsp. Olive Oil
2 Vegetable Stock Cubes
1L Boiling Water
Salt & Pepper, to taste

 

Preparation Method

  1. Cut the radishes into small pieces and dice the onion.
  2. Put the chopped radishes, soft cheese and cream into a blender or food processor and blitz until smooth.
  3. Heat the oil in a large non-stick saucepan on a medium heat and add the onion. Cook for around 5 minutes or until softened.
  4. Combine the stock cubes and boiling water, then combine with the radish mixture in the saucepan and bring to the boil, season with salt and pepper.
  5. Leave to simmer for 20 minutes, then serve.

Zesty Radish & Cucumber Salad (v)

Prep time 10 minutes
Serves 8

Ingredients
For the salad:
1 Medium Cucumber
500g Radishes
1 Celery Heart
1 Large Red Onion
1 Handful of Flat Leaf Parsley

For the dressing:
5 tbsp. Olive Oil
Juice of 1 Lemon

 

Preparation Method

  1. Start by preparing the cucumber, radishes and celery into chunks, finely dice the onion and roughly chop the parsley. Combine in a large serving bowl.
  2. For the dressing, mix the olive oil and lemon juice in a small bowl and stir well.
  3. Pour the dressing over the salad, toss together then serve.
