3 easy desserts for under 5g carbs

It’s a myth that living a low carb lifestyle means giving up desserts! Spoil your guests (or yourself) with these low carb sweet treats which can all be enjoyed for less than 5g carbs per serving.

Vegan Chocolate Mousse (v)

Prep time 5-10 minutes

Serves 4

Ingredients

2 Medium Avocados

240ml Unsweetened Almond Milk

60g Cocoa Powder

1 tbsp. Stevia

Pinch of Salt

 

Preparation Method

  1. Peel and remove the stones from the avocado then add to a blender along with the remaining ingredients.
  2. Blend until smooth then divide into four serving glasses or bowls, chill until ready to be served.

Chocolate Lava Cakes (v)

Prep Time 5 minutes

Cook Time 10 minutes

Ingredients

4 tbsp. Cocoa Powder

30ml Extra Thick Double Cream

2 Medium Eggs

1 tbsp. Granulated Stevia

½ tsp Vanilla Extract

½ tsp Baking Powder

5g Butter, for greasing the ramekins

 

Preparation Method

  1. Preheat the oven to 200°C/180°C fan (390°F/350°F fan) and use the butter to grease two ramekins.
  2. Mix together the cocoa powder, stevia and baking powder in a bowl then set aside. In a separate bowl whisk the eggs until light and fluffy – the aeration of the eggs will help the cake to rise.
  3. Use a spatula to fold in the double cream, vanilla extract and whisked eggs with the dry ingredients.
  4. Pour the mixture into the two ramekins and then bake for 8-10 minutes. Be careful not to overbake, you want the top of the cake to be set but the centre to remain slightly gooey!

Clotted Cream and Frozen Strawberry Ice Cream (v)

Prep Time 5 minutes

Chill time 1 ½ hours

Serves 4

Ingredients

400g Frozen Strawberries

225g Extra Thick Double Cream

1 tsp. Vanilla Extract

1-2 tsp. Stevia

Preparation Method

  1. Blend the strawberries, leaving a few large chunks.
  2. Add the strawberries and remaining ingredients to the container of the ice cream maker.
  3. Switch the ice cream machine on and set to prepare the ice cream according to the machine’s instructions.
  4. Alternatively, combine the mixture in a container and place in the freezer.
  5. Take the mixture out of the fridge every 30 minutes and mix using a whisk or spoon.
